Apple and Rhubarb Cake recipe

Whilst Rhubarb is neither fruit nor veg, it is equally delicious and perfect for a springtime recipe. For this beautiful light and delicate cake, you will need;

  • 7 oz cooking apples, peeled and diced

  • 7 oz rhubarb, cut into lengths, approx 3/4”

  • 8oz self raising flour

  • 1tsp each of baking powder, cinnamon and ground mixed spice

  • 2 large eggs

  • 3 1/2 oz soft brown sugar

  • 7 fl oz semi skimmed milk

  • 3 1/2 fl oz sunflower oil

Method:

  1. Preheat the oven to 190c/ fan 170c gas 5

  2. Line 9” cake tin with baking parchment

  3. In a separate bowl, whisk eggs with the sugar, milk and sunflower oil

  4. Pour the wet mixture into the dry, stir gently until combined then add apple and rhubarb, stirring until evenly mixed

  5. Pour into the tin, bake for approx 1 hour until well risen and golden on top. Test with skewer then leave to cool for 10 minutes before removing from tin.

  6. Serve cold as cake or warm with a little creme fraiche or cream as a dessert.
