Easter Biscuits Recipe

These crispy treats are called Easter biscuits but we think they’re yummy at any time of year!

You will need;

  • 250g (unsalted) butter , softened

  • 140g golden caster sugar

  • 1 medium egg, separated.

  • Zest of 1 lemon

  • ½ nutmeg, grated

  • 300g plain flour

  • ½ tsp fine salt

  • 60g currants

Beat butter and sugar together until well combined. Add the egg yolk, lemon zest and nutmeg and beat again.

Sift in flour plus salt and currants and mix together to make a firm dough (use your hands if necessary).

Form into a roll, wrap and chill in the fridge for 30 mins.

Oven -180C/160 fan/gas 4.

Line baking sheets with baking parchment.

Cut dough in half and roll out to a ½ cm thickness. Cut out biscuits with a 6cm fluted cutter and lift carefully onto baking sheets. Chill again for 30 mins.

Bake for 7 mins, then remove from the oven, brush with egg white, sprinkle with extra sugar and return to the oven for 7-8 mins or until lightly golden brown. Leave to cool on the trays for 5 mins then carefully transfer to cool completely.
